This month’s Donor Spotlight honors Dick Carleton and his team at Mi Casa Mexican Restaurant and Cantina for hosting the first annual Fiesta for BOEC dinner on Thursday June, 3rd which raised a record-breaking $85,000 for BOEC Adaptive Ski and Snowboard and Wilderness Programs. Eighty of BOEC’s friends, both old and new, gathered together for the first time in over a year to enjoy an evening filled with gratitude, laughter and enjoyment as they shared why we hold BOEC near and dear to our hearts. From the passed hors d’oeuvres, to the gourmet four course Mexican meal prepared by Executive Chef Bruce Carlton, to each elaborate cocktail pairing sponsored by Herradura Tequila, the inaugural Fiesta for BOEC was an affair to remember.

The evening carried a supportive energy not only because of the wonderful company and delicious food and beverages, but because BOEC is a very special organization to Dick who started volunteering as an adaptive ski instructor when he first moved to Breckenridge in the early 80s. Dick shared his story as he welcomed everyone at the start of the evening announcing that his goal for the night was to raise $50K for BOEC’s programs. This goal was not only met but overwhelmingly surpassed thanks to the many generous and committed attendees joining us for this special event.

The success of the evening could not have been possible without the hard work of the team at Mi Casa including Tamika Smith, Jen Cawley, Dick Carleton, Chef Bruce Carlton, and the many cooks and servers who ensured that everything came together so seamlessly. We are ever grateful to our Board of Directors and guests who purchased tables, donated that evening and procured items through the silent auction, all of which contributed to the evening’s success. Finally, a heartfelt thank you to the very generous donor who gave the initial $25K which made the evening’s fundraising success possible. We look forward to a continued partnership with Dick and the amazing team at Mi Casa and seeing everyone again next year.
